In My Kitchen: Fried Talakitok with Sweet and Sour Sauce

I noticed that majority of my family's food intake during these past few weeks is more of pork and chicken. We seldom eat fish and veggies. Aside from the fact that we need to be health-conscious since the husband's cholesterol level isn't  good, according to the result of his recent medical exam, I have to train Thea (and eventually Yohan) to eat more nutritious foods to remain healthy. To achieve this, I will start to go "on a fish and veggie weekend", that is, a fish dish on Saturdays and vegetables on Sundays or vice versa.

Today, I prepared a fish dish called Fried Talakitok with Sweet and Sour Sauce. 

 


Here's my own version of Talikitok with Sweet and Sour Sauce.Pardon me on some errors in culinary terms because I'm just a chef-wannabe.


2 pcs Talakitok (or any fish of ychoice)
salt
Cooking oil

For the Sweet and Sour Sauce:
3 tbsp. Tomato paste
1 pc medium sized onion, chopped
1 clove garlic, minced
   ginger, chopped
1 pc tomato, chopped
1 pc carrot, diced
1 pc, red bell pepper, cut into strips
1/4 cup cornstarch, diluted in water
salt and pepper to taste


Procedure:


Heat enough oil in a frying pan. Coat the fish with salt. Once the oil is hot, fry the fish until golden brown. When cooked, remove from oil andset aside in the serving platter.

To prepare the sweet and sour sauce, saute onion, garlic, ginger and tomato. Add carrots and tomato paste. Add 2 cups water. Add salt and pepper. Simmer until the carrots is cooked (but still crunchy). Add the bell pepper and simmer for 2 minutes. Transfer the sauce in a bowl and serve together with the fried talakitok.

Busy Weekend

We're having a busy weekend...

Yes! Everyone in the house is busy today. ah minus the girl named Thea. She's out of the house since 9am this morning. She was invited by our minister's wife to their house. Her  2 tweeners wanted to play with Thea. 

Baby Yohan woke-up at 5am. Papa and I talked to him and he cooed and smiled a lot. I even took a picture of him and Ate Thea "talking together".


Thea says: Good morning, Yohan!

At 6am, Papa prepared our breakfast - tocino, fried rice, pandesal and coffee for us; Koko Crunch for Thea). After eating breakfast, Papa and me went to the market to food for this coming week. And my busy hours at the kitchen followed afterwards... I'm also the one who bathe Yohan because my sister is busy doing the laundry. I'm looking forward to our bath time tomorrow coz he'll be using Avon Baby Wash and Shampoo for the first time. I've read and heard several positive feedbacks about the product. :)

Weekends can be tiring and toxic but it's my favorite days of the week. As a working mom, I really look forward to bond and spend quality with my family.

Yohan's Firsts: Rolling Over

It's amazing! Little Yohan is starting to achieve his first big developmental milestone. This morning, we discovered that he can already roll over. As parents, we are happy to see him grow and develop quite faster that other children. However, he also needs more attention because we're afraid that he might be suffocated since his neck is not strong yet. We documented it by taking a short video clip of him rolling over but I can't post it coz my internet connection's wonky right now.

I've read that babies may be able to kick himself over, from his tummy to his back, as early as age 2-3 months - Yohan is 2 months old. It may take him until he's about 5 or 6 months to flip from back to front, though, because he needs stronger neck and arm mucles to do that.

before Uncomplicated's 3rd blogversary. I'm thinking of re-launching this blog before its anniversary. I'm planning for its make-over (new blog header, lay-out, etc.).

This year, I will focus more on parenting, child care, home organizing, and some other adventures as a working mom. As a New Year's resolution, I will blog more often.

2010: A Year of Triumph and Trials

Yes, indeed! 2010 is one of my unforgettable years – the year that brought me tears of joy and sadness. So, let me give you a glimpse of the year that passed.

January

I am grateful to be part of Team Earthlingorgeous won the first-ever Nestle Fitnesse 14 Days to Show Off your Shape Challenge. Our team won the contest. We glamorously modeled the designer pieces we’ve won during the photoshoot with Wes Villarica at Parallax Studio Makati last January.




Thea and I prepared a simple homecoming celebration during my husband’s homecoming in January 31, 2010.

February

A week after husband’s arrival, we went to Baguio for a three-day vacation. ‘Twas Thea’s first visit to the country’s summer capital.


March

I got pregnant with our second bundle of joy and it was another dream come true for our family.

April

April was sad month for me and my family. My brother passed away last April 2 due to cardiac arrest. His untimely death really brought us sorrow and pain.

Thea celebrated her 4th birthday in Bicol last April 25th.


May

 …celebrated my 33rd birthday.  It was just a simple celebration but Thea's arrival (from summer vacation in Bicol) and my husband's phone call made my day complete.

I attended Mommy & Me Sparty: Benefits of Touch Therapy May 29, 2010 at Dulcinea, Eastwood City, Libis QC. Thanks to Mommy Bloggers Club and Nuffnang for inviting me in a mommies meet-up at the Johnson’s Baby Bedtime Discovery. 

After 16 long years, I got the chance to meet some of my high school buddies last May 30. . We have not seen each other since our high school graduation day. The meet-up is part of the pre-planning activities in relation to our Alma Mater's Grand Alumni Homecoming slated on May 2011. 


June

I filed leave of absence (LOA) from graduate school. I wish I can go back next semester.

My little girl’s next step in pre-school – she’s now in Kindergarten.

Thursday, July 29, 2010 at around 10am, I went down from our office using the stairs, since the elevator broke down again. While going down to the second floor, I accidentally slipped in the 3rd to the last step and fell down. Thanks God, nothing serious happened to me and my baby.

 August

We celebrated our 5th Wedding Anniversary last August 20. Cheers to more love and happiness until the end…

September

..tried the Pantene 14-Day Challenge and successfully attained less hair fall. Thanks Pantene!!!

October

I expected to give  birth during the last week of this month. I Filed a leave from work during the 3rd and last week of October.

November

The happiest month… Baby Yohan Amiel was born last November 4 via normal spontaneous delivery. Thank you, Lord for the wonderful blessings.


December

My husband arrived last December 12. He went home so he can finally cuddle and play with our little angel darling Yohan.

Thea went to Baguio City with her Titos, Titas and cousins…

Time flies so fast, yet so many wonderful things happened. Happy or sad, success or failure, we’ll learn from all those wonderful memories just always remember: Count not the worries but all the blessings received from our Almighty God.
